What is dashi? / 説明

Dashi is the basic Japanese soup stock behind miso soup, udon and soba broth, simmered dishes and hot pots. This blend combines bonito, mackerel, sardine and flying fish with shiitake mushroom and kombu (kelp), processed by Maikon no Kohara, a kombu specialist in Osaka, Japan.
だしは味噌汁・うどん・煮物・鍋の土台になる日本のスープストックです。鰹・鯖・うるめ鰯・飛魚に椎茸と昆布を合わせ、大阪の昆布屋「舞昆のこうはら」が加工しています。

How to use / 使い方

1. Soup stock: Put 1 bag in about 800 ml of water, simmer on medium heat for 1–2 minutes, then remove the bag (3–5 servings).
2. Miso soup: 1 bag for about 700 ml of water (about 5 bowls). The dashi is pre-seasoned, so start with about 6 g (1/3 tbsp) of miso per bowl and adjust to taste.
3. Noodle soup (udon / soba / ramen-style broth), hot pot, simmered dishes: about 600 ml of water per bag; add soy sauce to taste.
4. As seasoning: Tear the bag open and sprinkle the powder into stir-fries, fried rice, omelettes or quick pickles. Add a little at a time.
